Pancakes!

I have a confession: I'm horrible at making pancakes. The whole deal with the butter and the griddle and the knowing when to flip...I am somehow, terrible at this. I usually only reserve pancake-making to when I'm all alone, so that my screw-ups aren't to be shared and I can discreetly throw away any burned little medallions.

Having made butter last night, I had a cup of fresh buttermilk and I just didn't see a more appropriate use for it than buttermilk pancakes. I have the day off and my hubby is at work, so I can make them in private and if it gets screwed up, he'll never know.

I happen to be out of regular all-purpose white flour, but I have whole wheat flour. Being too lazy to go out and buy regular flour, I decided that these will be buttermilk whole wheat pancakes. Pancakes made with whole wheat flour are NOT light and fluffy...they are dense and hearty, so I can usually only eat one large one and then I'm done.

  • One cup wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt (or less if you're using salted butter)
  • 1 1/2 tablespoons sugar
  • 1 egg beaten
  • 2 tablespoons butter or some other fat, melted
  • 1 cup buttermilk
Pop some butter on a hot (but not too hot) griddle or non-stick pan and drop a ladle full down into the melted butter and flip when the bubbles start forming on the top. I have a tendency to use too much heat...so less is better. You can always turn up the heat.

I had mine with sliced banana and a little maple syrup and of course...more fresh butter :)

  1. Hi Kay! I know this is an old post, but I got here from Tess's blog and just had to peek. Those pancakes look great, but what prompted me to comment was the plate in the last picture! I adore it!
